A Vegetable Pasta Salad

There’s nothing like curly pasta to give vegetables some kid appeal! This simple salad that you can quickly prepare with your kids will disappear even more quickly because kids adore vegetable pasta salads! You can prepare this salad for lunch, dinner or even for your kid’s birthday party!

To prepare the vegetable pasta salad for 12 servings you will need:
- 4 tablespoons of red vinegar
- 3 tablespoons of olive oil
- 1 tablespoon of fresh lemon zest
- Salt and pepper
- 4 cups of cooked whole wheat pasta fusilli (curls)
- 1 cup of diced red pepper
- ½ cup of diced tomato
- ½ cup of chopped celery
- ½ cup of peas
- ¼ cup of chopped red onion

First of all, make the dressing by whisking together the vinegar and oil then adding the lemon peel with some salt and pepper. Prepare about ¼ cup of dressing and refrigerate it until it will be ready to use.

To make the salad, combine the pasta, red pepper, carrots, celery and onions in a large bowl, then add the dressing and toss well. Add some salt and pepper as per your taste and let your kids enjoy the fresh delicious vegetable pasta salad!
