Delicious Summer Salad: Avocado, Corn and Tomato

Prepare this colourful, delicious and healthy salad and enjoy it at dinner with your kids.

To prepare a salad for 4 to 6 persons you will need:
-          2 ½ cups of fresh corn kernels
-          1 ½ cups of diced avocado
-          1 pint of quartered cherry tomatoes
-          ½ cup of finely diced red onion
-          ¼ cup of chopped cilantro
-          ¼ teaspoon of salt
-          ¼ teaspoon of freshly ground pepper
-          1 tablespoon of fresh lime juice
-          2 tablespoons of olive oil

In a large bowl, mix olive oil, lime juice, cilantro, salt and pepper. Add corn, avocado, tomatoes, and onion. Mix all together.

You can serve it as a salad or as a chunky dip and scoop it up with tortilla chips!
