Perfect Summer Recipe for Gestational Diabetes: Gazpacho
Gazpacho is the perfect summer meal for pregnant women who suffer from gestational diabetes. Each one-cup serving of gazpacho provides only 100 calories, 15 grams of carbohydrate, 3 grams of fibre, 3 grams of protein, and 3 grams of fat.
To prepare the gazpacho you will need:
- 1 small peeled cucumber without seeds
- ½ medium green bell pepper without seeds
- 2 chopped scallions
- 1 clove of minced garlic
- 2 tablespoons of red wine vinegar
- 1 tablespoon of olive oil
- The juice and zest from one lime
- 4 cups of chopped tomato
- 1 cup of low sodium tomato juice
- ¼ teaspoon of black pepper
- 1 dash of hot sauce
Blend the cucumber and the bell pepper in a food processor. Add the rest of the ingredients and blend them until they become smooth. Chill it for at least 2 hours before serving. Enjoy your cold gazpacho.
