Rice, Peas and Carrots

Did you know that 1 cup of peas contains as much protein as one tablespoon of peanut butter plus the Vitamin A & C, Calcium and Iron! It is a very important vegetable to introduce to your child.

What you need:
-    250g of frozen or fresh peas
-    1 carrot chopped in small cubes
-    1 chopped onion
-    1 garlic chopped
-    1 spoon olive oil
-    1 ¼ cup of vegetable stock
-    Pinch of pepper and salt
-    100g tomato paste
-    1 cup of rice

Cook the rice as per the package prescription. Let it simmer on low heat.
Add the olive oil to a pan and stir in onion, garlic, pepper and salt. Add the vegetable stock and boil.
Stir in peas and carrots. Cover; reduce heat and leave to boil until soft and tender. Add tomato paste and simmer for 10mn.
Serve it with rice.

You can cook this recipe with minced meat to flavor it up.
