Stuffed Aubergine

A very healthy supper that you can prepare and freeze for up to 4 months. It will be a perfect meal to offer for your kids after a long day.

What you need (8 portions):
- 4 aubergines
- 250g minced meat
- 2 medium onions
- 4 garlic cloves crushed
- 4 tbsp olive oil
- Black pepper
- Nutmeg
- 250ml vegetable stock
- 200 ml tomato paste
- 1 tbsp parsley chopped
- 100g mozzarella cheese

Cut the aubergines in half, then slice the flesh with fine lines, add 2 tbsp olive oil and black pepper. Put in the oven for 20mn at 200 degrees. When done, scoop the cooked flesh.

Meanwhile, heat the remaining oil and fry the minced meat. Put aside. Fry the onion and garlic until soft. Add nutmeg, parsley, tomato paste, vegetable stock and minced meat. Simmer for 20mn.

Add the scooped flesh to the mixture and season with pepper. Add the whole mixture in the aubergine skin and sprinkle the mozzarella over them.

Wrap in foil and freeze.

Before serving, thaw thoroughly and put in the oven for 20mn until slightly golden.
